Professor Charles Spence is head of the Crossmodal Analysis Laboratory, Division of Experimental Psychology at Oxford College. He's fascinated by neuroscience-inspired multisensory design, particularly because it pertains to food and drinks. It is a new area of analysis referred to as gastrophysics, one which he describes in his newest guide titled The Good Meal.
